Rain. Sun. Rain. Sun etc etc. It’s been an uneven summer in terms of the weather but hopefully you managed to have a bit of a break before back to school season.
So here we are in September which means that those of you with kids will be dressing them in oversized blazers so they can learn about words, numbers and the inner workings of a frog.
For those of you who don’t trust school dinners there’s likely to be a lunchbox in their satchels. But what do you fill it with? Dull things like a ham sandwich, the everyday apple and a packet of crisps?
Why not cheer your little students up with something that will have them slavering in anticipation of lunchtime.
We’d recommend salmon rice salad, placed in some Tupperware next to a spoon. We guarantee that they’ll be the envy of the playground. And it’s quick and simple for overworked parents as well.
How to make Salmon rice salad
Serves 1 (twice)
Let’s make two portions so you can cover Monday and Thursday:
○ 1 salmon fillet
○ 100g rice
○ 10g peas
○ ½ diced red pepper
○ ¼ diced
○ Chopped parsley, dill and chives (1 tbsp of each)
○ Salt and pepper
Cook your salmon fillet for 20 minutes in a preheated oven, or until cooked through. Either use premade rice or make your own. Boil your peas and add to the rice. Then add in the other ingredients, season, give it a mix around and leave to chill in the fridge until needed. Yep, it’s that simple.
