SEASONAL PICK: SWEDEPosted 5 January 2017 by The Saucy Fish Co.
This January, we have a need for swede.
This Saucy favourite is at its very best this time of year, so pop it in the shopping basket and enjoy its many nutritious benefits.
Swede – unsurprisingly – originated in Sweden, and is a superb source of vitamins and nutrients. It provides you with plenty of vitamin A, vitamin C, fibre, calcium and potassium. Now that’s sure to get your fins flapping.
The root vegetable is also very low in calories. In fact, the amount of calories in swede depend upon the cooking method; something to consider when you’re deciding whether to roast, bake, steam, mash, purée or boil it.
Swede provides a mild and sweet flavour, making it a finomenal side dish. We recommended using it to make our quick and easy root vegetable mash, pairing this with our Sunblush Tomato dressing and sea bream.
○ Sea Bream with Sunblush Tomato dressing
○ 3 large baking potatoes
○ Half a swede
○ 2 carrots
○ 25g unsalted butter
○ A handful of frozen peas
○ A splash of milk
Put the potatoes, swede, carrots and peas in a large pan of salted water, then bring this to boil and cook for around 20 minutes - a little longer if the ingredients are not yet tender. Once boiled, drain and mash the ingredients together.
Next, add the butter, a splash of milk (if needed) and plenty of salt & pepper. Mash everything together and then pair this with our famous Sea Bream with Sunblush Tomato dressing.
Top tip: Swede easily disintegrates when overcooked, so make sure you keep an eye on those cooking times!
