What You Need.
1 pack smoked haddock, skinned
2 small eggs
Fine bread crumbs for coating
Flour for coating
1 egg for coating
How You Make It.
STEP 1: Boil the eggs for 3 minutes until just cooked and peel.
STEP 2: Place the smoked haddock in a food processor and pulse until fine, add some black pepper and mix well.
STEP 3: Form a flat layer of smoked haddock on your palm and place the boiled egg in the centre, gently wrap the mixture around the egg, sealing. Leave in the fridge for half an hour to firm up.
STEP 4: Dip the formed ball into plain flour, then egg and finally bread crumbs. Repeat this step for a crispier coating.
STEP 5: Deep fry until golden and crispy.
