Let's tackle the taste buds. Basically, you need to look at the side dish and main meal as a 'whole'. If your main meal is slightly peppery, then you should reach for citrusy accompaniments like lemon or lime to balance out the pepper. For example, mackerel served on a bed of rocket would leave behind a peppery taste. Therefore, matching a lime or lemon vinaigrette to the side salad works wonders. Finish off with a sweet accompaniment - say roasted cherry tomato salsa - to complement the sour citrus notes, and you have a beautifully balanced dish.
To bring out the best in your dish, you need a little bit of everything to get those taste buds stimulated - combine naturally sweet, salty, sour and bitter foods together to get a really interesting mix going on.
