HOW TO MAKE A SPICY SALMON SALAD

Salads are a good thing.

Light, healthy and full of great flavours, what’s not to like about them? However, we do have a tendency to be a little conservative with our salads and just stick to a tomato, cucumber, lettuce combo. But the salad is a flexible thing whose ingredients are only limited by your imagination.

Let’s mix things up a little with an easy salmon salad recipe that will get your taste buds tingling and have everyone in the family demanding that you do it again very soon.

You may not be surprised to discover that our recipe includes fish. But this is fish together with a little bit of fire to make things interesting. Serve for lunch, dinner or even breakfast if you’re inclined.

○ 2 salmon fillets

○ 4 tbsps fish sauce

○ The juice of half a lime

○ 2 tsps brown sugar

○ 4 chopped chillies

○ Olive oil

○ A thinly sliced onion

○ A large chopped tomato

○ A tbsp of chopped basil

○ Lettuce leaves

Let’s start with the dressing. Mix the fish sauce, lime juice, brown sugar and chopped chillies in a small bowl. Now cook your salmon fillets for 20 minutes in a preheated oven. Get a fork and chunk it up. Add onion, tomato and basil, pour the dressing on top and give everything a light toss. Serve on a bed of lettuce leaves.
