HOW TO COOK A WHOLE SALMON FOR CHRISTMAS

Christmas is a time when you can show off a little in the kitchen. The chance to serve up something showstopping to a table full of family and guests.

But why not leave turkey to those with no imagination as there’s a sleigh-full of alternative Christmas dinner recipes around. For example, have you ever tried a whole salmon? This glittering fish can be placed in the centre of the table and give everyone a feast in between pulling crackers and telling bad jokes.

Making a festive salmon

It’s surprisingly simple to cook a whole salmon in the oven. The big secret lies at your supermarket or fishmonger. Get them to gut and clean your salmon before you buy it. That means the difficult bit out of the way, leaving you with more time to wrap presents and watch the Gavin and Stacey Christmas special.

Turn the oven up to around 200° C. Now get your fish and give it a good stuffing. By that we mean putting some lemon slices, parsley and bay leaves into what is politely known as the body cavity.

You’re almost there now. Wrap your salmon in silver foil with a little bit of oil and white wine. Put the fish in the oven, wait for around 50 minutes and it’s ready to go.

When it comes to recipes for salmon this one really is a cinch.

Now you’re ready to serve and enjoy the ‘oohs’ and ‘aahs’ your efforts truly deserve. Merry Christmas.
