Can you feel the cold wind blowing? Can you see the ice forming on your car in the morning? Can you believe how much your gas bill has gone up?
Yep, it’s winter and it’s getting dark and chilly. At this time of year it would make sense for humans to dig a hole in the ground and go to sleep for three months. But we’ve got lots to do and we’d miss Christmas. Instead, let’s embrace the season and appreciate how good hot and hearty food tastes at this time of the year.
In fact, it’s almost worth getting cold so you can get indoors and make something that will make you feel all warm and fuzzy inside. There are lots of soups, pasta dishes and casseroles that will do the trick but we’re called The Saucy Fish Co. for a reason and we’re going with fish stew.
Here’s a recipe that’s simple and will be ready to go by the time your toes have thawed out after that long walk home. Enjoy.
SIMPLE FISH STEW
○ 2 Cod fillets chopped into large chunks
○ 150g prawns
○ Finely sliced onion
○ 3 sliced garlic cloves
○ 1 tsp smoked paprika
○ 400g tin chopped tomatoes
○ 750ml vegetable or chicken stock
○ 400g butter beans
○ Fresh parsley
Fry the onion and garlic in olive oil until soft. Add paprika, chopped tomatoes and stock then simmer gently for 10 minutes. Next, add fish and beans to pan and simmer until fish is cooked through. Add prawns and cook until pink. Serve in bowls with parsley.
