Let’s bring a little bit of sophistication to our Christmas parties. Yes, you’ve tastefully decorated the house, bought some posh wine and laid out the embroidered napkins, but don’t stop there. Make a little time in the kitchen to create appetisers that will have everyone at your gathering praising the host and asking for the recipe.
Salmon is the ideal appetiser. It’s delicate, much loved flavour is matched by a flexibility that allows it to be transformed into bite-sized snacks that demand ‘just one more’. On top of that you get maximum impact for only a little bit of effort. Here’s three easy recipes that will make you festive bash go with a Saucy bang.
Smoked salmon bites with lemon dill cream cheese
○ 150g smoked salmon
○ 180g cream cheese
○ 2 tablespoons Greek yogurt
○ Lemon zest and juice
○ 1 tablespoon freshly squeezed lemon juice
○ 1 tablespoon finely chopped fresh dill
○ 1 minced garlic clove
○ 1 sliced cucumber
Beat together the cheese, yoghurt, lemon juice and zest, dill and garlic. Scoop it into a piping bag. Now put small strips of salmon on to your cucumber slices. Then all you need to do is pipe your cream on top with a little more dill and some pepper. You should be able to make over 30 of these treats using the quantities provided.
Smoked salmon, avocado and cucumber bites
○ 1 cucumber
○ A peeled and pitted avocado, peeled
○ Lime juice
○ 170g smoked salmon
○ black pepper, for garnish
Mash up your avocado with a little lime juice. Now use a knife to turn your cucumber into around 12 slices. Put your avocado mix on top of the cucumber then add a little bit of smoked salmon on each. Add pepper and chives and you’re ready to serve.
Smoked salmon pâté
○ 200g smoked salmon
○ 200g cream cheese
○ Three spring onions
○ Salt and pepper
○ 1 tsp lemon juice
This is easy. Put all your ingredients in a blender and blitz for a few minutes. Add more fish or more cheese if you prefer it fishier or creamier. Now all you have to decide is what to serve with your pâté. We’re going with carrot batons.
