Did you know that August is one of the best month’s for feeling clever?
Scientists have known found that most folks had better mental agility when they got higher doses of Vitamin D from fish and bright sunshine.
That means eating Saucy al fresco in your back garden will result in you being able to do The Times Crossword in double quick time. Of course, we’re not always guaranteed good weather in the UK so make sure there’s plenty of fish in your freezer to avoid feeling senseless when the summer rain starts to fall!
Here’s a quick recipe that’s perfect for some BBQ’d fish in the sunshine: Citrus Salmon
Recipe serves 4
○ 2 x Saucy Frozen Salmon with Chilli, Lime and Ginger Dressing (4 fillets)
○ 2-3 large oranges
○ Zest of 1 lemon
○ Olive oil
For a salad:
○ 2 segmented oranges
○ Juice of 1 lemon
○ 4 tbsp olive oil
○ 2 bags watercress
○ A few capers
○ A few pitted green olives, roughly chopped
Turn on the BBQ. Grate zest of one oranges and add to the lemon zest. Mix with the olive oil, drizzle over the fish and season. Cut the rest of the oranges into slices and arrange over the barbecue. Char the orange slices on 1 side. Defrost your fillets, then place them on the BBQ wrapped in tin foil, laying your orange slices over the top. Barbecue the fish for 5-8 mins on each side.
Put the orange segments in a large bowl with the squeezed juice from the rest of the oranges and lemon juice. Season and stir in the olive oil. Put watercress in the dressing with capers and olives. Serve with the fish, and a drizzle of Chilli, Lime and Ginger Dressing on top.
