WIMBLEDON WINNING DISH

Forget what’s happening on centre court because the real action will be right in your hamper with this shoal stopping side that’s perfect for any picnics on Murray Mount!

All you need for this Spanish inspired side is 225g of couscous, 300ml vegetable stock, 2tbsp olive oil, 200g sliced chorizo, 1 onion, 1sp paprika, 1 can of chickpeas and 425ml of chicken stock.

Prepare the couscous with vegetable stock and leave to stand for 3-4 minutes. Heat the olive oil in a large pan and stir fry the sliced chorizo for 3-4 minutes and place to one side. Chop an onion and cook over a medium-high heat for 5-6 minutes until softened and stir in the paprika.

Next up, add the chickpeas, chicken stock and chorizo and leave to simmer for 2 minutes. Finally, add the couscous and scatter with a handful of chopped parsley to garnish. So there you have it, a dish fit for a Wimbledon win!
