Stop the presses, look no further. We’ve searched high and low to find the November vegetable. Would you believe it, it’s the humble red cabbage! Nutritious, versatile and bringing the colours of autumn to your plate – fill up on this little marvel.
○ We love to ‘go green’ from our veg to our planet, but in this instance consider otherwise! Red cabbage has almost twice the Vitamin C of its green equivalent.
○ Red cabbage is one of the best natural sources of glucinolates – which help to prevent cancer.
○ That lovely red hue is down to anthocyanin polyphenols, which are said to act as an anti-inflammatory.
○ As well as being packed with vitamin C, glucinolates and anthocyanins; red cabbage is full of fiber, vitamin K, vitamin B6, potassium and manganese. It doesn’t even stop there; it also contains thiamine, riboflavin, folate, calcium, iron, and magnesium. It’s like a who’s who of the vitamin world!
