SAUCY CHEF TIP OF THE MONTH...LEEK!

Low in calories and full of antioxidants, minerals and vitamins; this month we’re making the most of leeks, with this simple buttered leek recipe.

Simply heat a generous blob of butter over a medium heat and stir in thinly sliced leeks. Once your leeks are thoroughly coated, cover the pan, turn down heat and cook for a further 15 minutes until tender. Finish with a bit of butter and a sprinkle of thyme.

A member of the onion family, the humble leek is versatile spring vegetable with a mild, sweet flavour. Look out for a leek with a small to medium size bulb, bright crisp leave and snowy white bulbs.
