SAUCY CHEF'S TIP OF THE MONTH...COURGETTE!

Courgettes are at their best during the summer months, making June the perfect time to start experimenting. We recommend this recipe for chargrilled courgette with basil, mint, chilli and lemon.

Look out for marrows approximately 10cm long with shiny, bright green skin. Prepare by trimming off the ends and cutting into long strips, then simply toss into a bowl along with half a finely cut chilli, adding a tablespoon of olive oil and a sprinkle of salt and pepper to season.

To cook, simply heat a ridged grill pan and griddle the courgette in batches for a few minutes. Finish with mint, basil and a squeeze of lemon - the perfect partner to our Salmon with Tomato and Chilli Chutney from the Ready to Eat range.
