Chicory is a root vegetable grown in the dark and beleaf us when we say, it is not to be overlooked.
Existing in both red and white varieties, chicory is only 23 calories per 100 grams and has proven probiotic properties which help ease digestive problems, detoxify the liver and boost the immune system.
So why not pair your chicory with some Saucy haddock, making a flavoursome dinner you won’t need to feel guilty about?
What you need, serves 2:
○ The Saucy Fish Co. Smoked Haddock with Vintage Cheddar Sauce
○ Rock salt
○ The Juice and zest of a Lemon
○ Olive oil
○ 4 heads of chicory (red or white)
○ 50g butter
○ 300ml of chicken stock
○ 2 cloves of crushed garlic
Pop your Saucy Haddock Foil Bake Bag in a preheated oven and leave for 15 minutes. Meanwhile, cut the chicory and discard the core; boiling for 2 minutes and then draining well. Heat the butter and 3 tablespoons of oil in a large pan and add the chicory, cooking for around 5 minutes. Turn the chicory and pour in the lemon juice and stock. Top with the garlic and seasoning, cover and leave on a gentle simmer for 20 minutes.
Pair the fish and chicory together, serve and enjoy!
Top tip: Store your chicory in the fridge to avoid it developing a bitter flavour.
