Jam packed with minerals, vitamins and dietary fibre, the Aubergine holds the powerful potential to lower cholesterol and assist with managing weight.
So what can you do with it?
With the summer holidays behind us, why not bring a feel of the Mediterranean to you with an aubergines recipe to warm up cooler October evenings.
Preheat the oven to 240°C before cutting your aubergine into 5cm chunks and mixing with shallots, chilli flakes and a drizzle of olive oil. Proceed to scatter the vegetable mixture into a roasting tin and bake for 30 minutes.
