TOP TIP OF THE MONTH: ASPARAGUS

Guess what’s back on the top of our shopping list this month? That slender old asparagus that lends itself so well to a healthy mid-week dinner.

So why is the veggie such a good’en? Well, it’s a great source or fibre, its contains anti-inflammatory properties AND just 150g of asparagus provides the daily recommended amount of folic acid. Winner winner… asparagus dinner, apparently?

Now you could fry, steam, or bake your asparagus and yeah, sure, it will taste nice. BUT, on the other hand you could make these tasty chilli fries using your asparagus and it will taste bloomin’ brilliant.

So, here’s what you need and what you need to do...

Ingredients:

○ Bunches of asparagus
○ Plain flour
○ Eggs
○ 50g parmesan
○ Finely grated
○ Chilli flakes
○ 50g panko breadcrumbs
○ Tbsp olive oil

Method:

1. Trim the ends of the asparagus. Get out three small dishes and tip the flour into one, the 3 eggs (beaten) into another and the parmesan/breadcrumbs into the final. Dip the asparagus into the flour, the eggs and then the breadcrumbs and cheese.

2. Heat oven to 220°C and cover a baking tray in the oil (a sturdy Swiss roll tin is ideal) and heat in the oven. Once the oil is hot, carefully lay the asparagus spears in it, then turn them. Roast for 20 mins, turning halfway, until the crumbs have browned to a crisp coating. Leave until just cool enough to pick up and serve with our Sea Bass and Salsa Verde.
