And no, I’m not talking about our all-time favourite film: Legally Blonde. I am indeed talking about the good old veggie, Rhubarb.
Aside from being delicious (really blooming delicious), Rhubarb boasts a number of health benefits, from boosting your metabolism to improving your digestion.
AND rhubarb is not only your best friend for its ability to aid your gut health… it’s also just so sweet, RIGHT?!
Make yourself a crumble, pair it with a pavlova or bake it into a cake!
Yes, that’s right, you can even put it in a cake. Chop up some poached rhubarb, mix with cream and spread inside a Victoria sponge. The perfect simple dessert for you dinner party.
What you’ll need:
○ Chopped Rhubarb
○ 100g Caster Sugar
○ 140g self raising flour
○ 85g butter
○ 50g muscavado sugar
○ 50g walnuts
What to do:
Put rhubarb and caster sugar into pan for 15 minutes and stir. When soft, pour the mix into a baking tray.
Heat the oven to 200°C. For the topping, mix the butter and flour together with your hands, then, once in a crumble texture add the sugar and walnuts. Mix thoroughly and pop on top of your rhubarb mix.
Bake for 30 mins and serve with hot custard!
