SPRING HAS SPRUNG!

Wave goodbye to winter and put a spring in your step by cooking up a batch of spring greens - the first cabbage of the year don’t you know!

For a refreshing side salad bursting with flavour and ideal for sharing, all you need is:

○ 500g spring greens
○ 2 garlic cloves
○ A squeeze of lemon
○ ¼ cup of olive oil
○ Cracked black pepper and a pinch of sea salt

This seasonal delight really is so simple to make. Begin by adding your spring greens to a pan of boiling water and leave for five minutes, remove, drain and chop. For the dressing simply mix the olive oil, lemon, salt and pepper together. Finish off by tossing the greens in the dressing – perfectly paired with Saucy’s Sea Bass and Beurre Blanc Dressing.

Saucy Chef Top Tip: Add a splash of colour by throwing some purple sprouting broccoli into the mix.
