VEGETABLE OF THE MONTH: SORREL NOT SORRY

We love sorrel – it’s the fresh, zesty, green leaf that packs a serious citrusy punch.

Its uniquely tart, sour taste makes it the ideal accompaniment for fish dishes – from salads to sauces, sorrel can help you zip up a saucy side dish that’s full of zesty flavour.

Sorrel is also packed with nutritional properties. High in fibre, magnesium, potassium and vitamin C, the leafy herb is also known for its anti-oxidant and anti-microbial properties. Sorrel has been used to help to reduce inflammation and respiratory illnesses.

Sorrel can also aid in digestion, regulate blood pressure, boost circulation and energy. It has also been known to help eyesight, heart health and kidney health.

Coming into season right now, you can find it in farmers markets alongside fresh herbs.

You can also grow it easily in your garden – it’s a hardy and low maintenance herb, so ideal for the vegetable patch.

Roasted summer vegetables with sorrel and watercress sauce

What you'll need:

○ Mix summer vegetables, e.g. carrots, parsnips, sweet potato - peeled and halved
○ 2 tbsp olive oil
○Salt & pepper to season

For the Sorrel sauce

○ 50g whole pine nuts
○ 1 garlic clove, chopped
○ Large bunch of fresh flatleaf parsley
○ 3 tbsp olive oil
○ 50g sorrel, roughly chopped
○ 100g spinach, roughly chopped
○ Dash of fresh lemon juice

What you’ll need:

1. Parboil your tougher vegetables (sweet potato, parsnips) in salted water for 10 minutes. Pat dry, and leave aside.

2. Heat the olive oil in a roasting tray until the oil starts to sizzle at around 200°C.

3. Add your summer vegetables to the roasting tray. Roast at 200°C for around 30 – 40 minutes until they start to crisp and brown.

For the sauce:

4. In a food processor, whizz up the pine nuts and garlic until they form a smooth paste.

5. Add the parsley, seasoning and oil, and continue to whizz.

6. Finally, add the sorrel and spinach until it forms a smooth paste.

7. Serve immediately as a side dish for your fish main dish, as The Saucy Fish Co’s Herb Crusted Salmon with Lemon Butter Sauce.
