Salmon is one of the heroes of the fish world. Tasty, heathy and a gorgeous colour, no wonder it features in so many of our products.
Heaven forfend you would want something else with your salmon except our range of sauces, but it’s a fish that does lend itself to some great side dishes. Have you tried any of the following with your pink wonder?
Asparagus: This goes so well with salmon you’d think they were related. Simply grill your asparagus and enjoy a food combo made in paradise.
Sweet potato: Healthier than your average potato, the added sweetness really brings out the flavours of the salmon. Bake the whole potato or turn them into fries: the choice is yours.
Citric salads: Most salads go well with salmon, but a little lemon or lime really adds some zing to your meal.
Brussels sprouts: Don’t save them for Christmas. The humble sprout is perfect with your favourite fish, especially with a little sprinkling of Parmesan.
Veggie curry: Looking for something a little spicier? Then rustle up a curry to complement your salmon.
Salmon and sweet potato: Serves 4
○ 4 Saucy salmon fillets
○ 350g sweet potatoes
○ 2 teaspoons canola oil
○ ½ teaspoon dried oregano
○ ½ teaspoon ground chilli powder
Scrub the potatoes and cut into 1 cm thick slices. Toss with a little oil, oregano and chilli powder, salt and pepper. Put foil on a tray, overlap potatoes and place fillets on top. Close up the foil and bake for half an hour or until everything’s tender.
