This May, Team Saucy are seriously craving mint, as this revitalising herb has plenty to offer to meal time.
It’s refreshing, it’s delicious and its oh so good for you. Mint is superb for digestion, as it soothes the stomach. That’s not all, it also acts as a palate cleanser, offers relief form nausea and – when put in hot water – can help to relieve headaches.

You will need: (Serves 2)
○ 1 packet of Saucy Sea bream fillets with a Sunblush Tomato Dressing
○ 1 tablespoon olive oil
○ ½ red onion, diced
○ 1 clove garlic, crushed
○ Half a chilli, deseeded
○ 1 can of cooked chickpeas, well drained
○4 tomatoes, sliced
○ juice of ½ lemon
○ a generous handful of mint leaves
Pre heat your oven to 180°C, then place in your sea bream fillets, cooking for 10 – 15 minutes. Meanwhile, heat the olive oil in a large frying pan and add the onion garlic and chilli, frying for several minutes.
Next, add your tin of chickpeas and diced tomatoes and cook for 5 minutes, until the chickpeas are dry and tender. Place your sachet of Sunblush Tomato sauce in a mug of boiling water for 1 minute, to heat.
Remove the chickpea salad from the heat and separate onto two plates, placing the sea bream fillets on top. Add a little lemon juice over the top, before drizzling your Sunblush dressing over the two fillets. To bring the enter dish together, add a generous helping of mint to each dish.
