This month, the cauliflower is taking the title of ‘Recommended Veggie’, proving both a seasonal sensation (best from January to April) and a sought after side dish, appearing on many fashionable restaurant menus everywhere.
The cauliflower is a cruciferous vegetable, that’s made up of a large number of flower heads. It is full of antioxidants (including vitamin C and manganese) and even contains a sulfur compound that helps to kill cancer stem cells. The veg also offers lots of digestive support, clearing the intestinal system of all that unnecessary bad stuff.
Don’t flounder over how to add more taste to your cauliflower. We’d recommend spicing it up with some Indian flavouring, then pairing with our Salmon with Sunblush tomato dressing.
○ 2 Salmon with Sunblush Tomato Sauce
○ Vegetable oil
○ Thumb nail of ginger, finely chopped
○ Half a chilli, deseeded
○ 1 tbsp. of cumin
○ 1 tsp of turmeric
○ Half kg of cauliflower
Heat the oil in a large pan then add the ginger, cumin and turmeric, allowing the spices to cook for one minute. Reduce the heat, then stir in the cauliflower so it’s well coated in the spices. Finish with a dash of salt and pepper. Cover the pan and cook for 12 minutes, then serve alongside your Saucy salmon.
