The time has come once again to celebrate everybody’s favourite Irish patron Saint; raising a pint of Guinness (or 5) to St. Paddy’s day.
However, fine food is just as important as fine ale on this occasion, so we’ve thought up an Irish inspired recipe that’s sure to shamrock your world on the 17th.
Line your stomach with our Salmon fillets marinated in Irish whiskey and honey.
○ 2 salmon fillets
○ 2 tbsps of honey
○ ¼ cup of vinegar
○ ¼ cup of Irish whiskey
○ 2 tsp of basil, finely chopped
○ Vegetable oil
○ salt & black, for seasoning
○ Juice of a lemon
To begin, place the salmon fillets in a large bowl. Mix the honey, vinegar, whiskey, lemon juice, basil, oil together, then pour over the fillets. Marinate this in the fridge for several hours.
Preheat oven to 200°C, then remove the marinated salmon from the mixture and carefully place in a roasting dish. Poor some more of the marinade over the fillets after 10 minutes, then proceed to bake until completely cooked. Serve the dish with new potatoes and the vegetables of your choosing.
