With National Fish and Chips Day taking place on 3rd June, it seems like the perfect time to bring you our alternative fish and chips recipe.
To make our delicious cod loin with sweet potato wedges for two, you will need:
○ 2 fresh cod loins
○ 3 medium sized sweet potatoes
○ 100g of green beans
○ Sea salt and cracked black pepper to season
What you need to do:
STEP 1: Slice the sweet potatoes into chunky wedges and pop in an oven proof dish, sprinkle with paprika and drizzle with oil before cooking at 180C for around 45 minutes
STEP 2: Next, prepare the cod loins by placing in an oven proof dish, drizzling with oil and seasoning with salt and pepper, then pop in the oven for 20 minutes until cooked throughout
STEP 3: As the wedges and cod cook, place the green beans in a pan of boiling water and leave for around five minute until soft
STEP 4: Finally, plate everything up, finish with a tartar or beurre blanc dressing and pair with a cold glass of Sauvignon Blanc
