We might have one very satisfied stomach after finishing our Thai fishcake and spicy salad, but who are we kidding – we always have room for dessert.
Something that is light and sweet is right up our street. Something like the tasty mango pudding recipe below...
○ 2 ripe mangos
○ 3 tsp. of gelatin
○ ½ cup boiling water
○ ⅓ cup white sugar
○ 1 cup of good-quality coconut milk
Cut up the mango and remove the stone, then place the fruit in a blender and blitz it.
Whisk your boiling water with a fork and sprinkle gelatin over the top. Keep stirring to ensure there are no lumps. Next, add the sugar and continue to stir.
Add this mixture to the mango in the blender, and then add your coconut milk. Blitz again until combined.
Pour the mixture into bowls then place in the refrigerator for at least 3 to 4 hours (up to 24 hours), then serve.
