TRAVEL FOR THE TASTE BUDS - TOKYO (OLYMPICS 2020 SPECIAL)

With Tokyo this week announced as the location for the 2020 Olympics, we bring you some culinary ideas from the hosts of the next games.

As well as being the capital of Japan, Tokyo is also home to the world's largest and busiest fish market. Tsukiji Fish Market is famed for its live tuna auctions. This is a staple of Japanese sushi making and requires fresh sashimi grade tuna as it is served raw.Brave and adventurous tourists may be tempted to try puffer fish (Fugu) when in Tokyo. Be warned though it can be lethally poisonous and must be carefully prepared to remove toxic parts by a licenced chef.

Spicy Tuna Sushi Roll

Simply chop the tuna steaks into small chunks and mix with mayonnaise then add a sprinkle of togarashi seasoning. Place a sheet of nori on top of a bamboo mat and spread a portion of cooked sushi rice onto the nori. Top the rice lengthwise with a large spoonful of the tuna mixture. Roll the bamboo mat over the sushi to create a cylinder shape and push down to ensure it keeps its shape. Cut the sushi roll into slices and serve with soy sauce, pickled ginger and wasabi.

Teriyaki Salmon

Pan-fry a salmon fillet in a hot griddle pan for 2 minutes on each side. In a separate pan lightly fry some chopped ginger, garlic and chilli in a dash of olive oil for 2 minutes. Add the zest and juice of a lime, soy sauce and maple syrup and cook until it has reduced and turned a sticky consistency. Finally add the salmon to the teriyaki sauce and serve with some fresh egg noodles.
