When it came to choosing the next destination on our travels for the taste buds series, the Saucy team knew there was only one place we could go this month! To celebrate the recent launch of The Saucy's Fish Co.'s Norway range, we've decided to share a delicious Norwegian delight - Gravlax!
Norwaylike many of its Scandinavian neighbours - has traditionally relied upon the raw materials readily available in the surrounding mountains and wilderness to make up most of its cuisine. However, Norway differs in many respects from its continental counterparts with a stronger focus on game and fish.
Gravlax, a salmon based dish, is a great example of how integral fish is to Norwegian cuisine. Traditionally fermented by fishermen in the Middle Ages, who buried the lightly salted salmon in the sand above Norway's tide line, today the fish is 'buried' in a marinade of salt, sugar and dill, then left to cure for a few days.
Gravlax makes a great appetiser for any fish lover. Cut the fish into thin slices and serve with thick, fresh bread, crispy crackers or well boiled potatoes for a real rustic delight!
