Spring into culinary action this month by adding a little seasonal sass to your mash. Thinly slice a bunch of spring onions, heat with a little butter in a frying pan until warm then add to your potatoes, before giving them a good mash. Much milder than onions, spring onions are plucked from the ground before the bulb has chance to swell and can also be enjoyed raw.
Pick a spring onion with bright and rigid green leaves, a firm bulb and prepare to cook or eat raw within a few days of purchase for best results.
