SAUCY CHEF TIP OF THE MONTH… LENTILS

Lentils and their wondrous health benefits have been around forever, particularly common in Greece, France, India and the Middle Eastern countries. Brilliantly, they are low in fat and high in protein, folate, phosphorus, fibre and iron and also a great source of energy.

To get your pulses racing, we have paired Puy lentils with a cod fillet for a super (slightly spicy) recipe that serves 4.

Ingredients:

○ 1 onion
○ 2 leeks
○ 2 fresh chillies, finely chopped
○ 160g of Puy lentils, rinsed
○ 750ml of vegetable stock
○ 4 cod fillets
○ 1 bay leaf
○ 2 tablespoons of vegetable oil
○ Lemon juice

Method:

Heat 1 tablespoon of vegetable oil in a saucepan adding your leeks, onions and chillies. Cook for two minutes before adding in the vegetable stock, lentils and bay leaf, bringing to the boil.

Leave the lentils simmering for 20 minutes and focus attention on the cod. Mix together 1 tablespoon of vegetable oil and lemon juice and brush this over the fillets, seasoning with salt and pepper. Proceed to grill the fish for around 7 minutes.

Check the lentils are soft and the stock is absorbed, then serve, placing your cod fillets on top.
