JUST BEET IT!

Beet away those post-summer blues with this deliciously handsome vegetable, that proves a remarkable source of folic acid, fibre, manganese and potassium – now that’s what we call brain food!

If you’re unsure of how to make the most of this superfood we recommend pairing with our Salmon and Chilli, Lime and Ginger Dressing. Heat your oven to 180C, before trimming and cutting your fresh beetroot into quarters. Add some olive oil, season, and place in the oven for around 45 minutes. Proceed to top with your salmon and bake for a further 15 minutes.

Remove from the oven and add red onion, spinach leaves, avocado and black pepper, before drizzling over the Saucy Chilli, Lime and Ginger dressing. The result: a deliciously warm salmon salad, perfect for a light lunch.

If that’s not enough fill your beet fix, simply drinking one glass of beetroot juice daily can improve your skin and hair!
