HEALTHY WINTER WARMER

Oh my codness, we’ve got a brand new (and healthy) winter recipe to leave you feeling all warm and fuzzy inside.

Enjoy our cod with an orange and tarragon crumb, and crunchy baked french fries.

Ingredients:

○ 1 cod fillet
○ 1 slice of bread
○ Zest of half an orange
○ Half a pack of tarragon
○ 1 chopped garlic clove
○ Chopped ginger
○ 4 teaspoons of olive oil
○ 4 medium baking potatoes
○ Salt and black pepper
○ ¼ cup grated Parmesan
○ A side of steamed vegetables

Method:

Heat your oven to 220°C and begin to prepare your crumb. Place your bread in a food processor, transforming it into breadcrumbs. Next, add the lemon zest, tarragon, garlic, ginger and seasoning.

Place your Saucy cod in the oven, topping it with your freshly prepared crumb. Bake for around minutes, or until the fish is completely cooked.

Next, the fries. Cut the potatoes into wedges then transfer them into a large bowl. Coat the fries with olive oil and a sprinkle of salt & pepper.

Place the fries onto a baking tray and into the oven for 12 minutes. Remove, then turn the potatoes and sprinkle them with the Parmesan – being as sparse or generous as you like. Continue to bake for 10 minutes, or until the fries are crispy and golden.

Combine the zesty cod, chunky fries and steamed vegetables for a taste that’ simply out of this tunaverse.
