This month we welcome My Cotton Tails to The Dock – Be Our Guest Sylvie!

The prospect of being in my bikini on holiday next week has caused me to ramp up my efforts in the gym, but also in the kitchen as eating clean and ensuring nutrition is on point are the most important factors for anyone trying to lose some weight.

One of the biggest complaints of people who eat healthily however, is their predisposed and very false notion that eating well means boring food! I wholeheartedly disagree and therefore wanted to share with you, one of my favourite recipes using my favourite product from The Saucy Fish Co. that will keep you on track with your diet and tastes absolutely divine.

My recipe for Green Tea Poached Salmon with a Chilli, Ginger and Lime sauce is so easy to make and full of highly nutritious ingredients; making it the perfect post-gym dinner.

Matcha green tea boosts your metabolism and aids fat burning, so poaching the salmon in it allows for it to absorb some of these benefits – it also tastes really good!

For The Salmon you’ll need:

○ 1 heaped teaspoon Matcha powder (I use Eat Clean Tea)
○ 300 ml Boiling water
The Saucy Fish Co. Salmon with Chilli, Lime and Ginger Dressing

For the Side:

○ 160g Quinoa
○ 150g Broccoli
○ 150g Spinach
○ 1 Chilli pepper

Method:

Add the Matcha to a measuring jug and pour 300 ml of boiling water into it. The best way to mix it is to use a latte/milk frother to dissolve the powder.

Add the Matcha tea liquid to a pan on a medium heat. Now place the salmon in the pan, turning it every so often until it is cooked.

Just before you make the salmon, add 160g quinoa to a sauce pan and pour 250 ml boiling water into the pan. The quinoa takes around 15 minutes to cook and should be a soft consistency, having absorbed most of the water.

Steam the broccoli, spinach and your chopped chilli pepper together.

Add The Saucy Fish Co. Chilli, Ginger and Lime sauce sachet to a measuring jug and pour hot water into the jug to heat the sauce.

Mix all the vegetables with the quinoa and serve.

Place your Green Tea poached salmon on top of the sides and drizzle the Chilli, Ginger and Lime sauce on top.
