High in protein and rich in folic acid, one cup of peas contains more protein than one egg and 100g of peas carries only 81 calories and zero cholesterol – now there’s some food for thought!
All you’ll need for this easy peasy protein packed recipe is:
○ 450g of peas
○ ½ cup chopped almonds
○ ½ cup chopped green onions
○ ½ cup feta cheese
○ ¾ cup of mayonnaise
○ 2 tbsp balsamic vinegar
○ Black Pepper
What to do:
Drain your peas and place in a bowl to one side. Toast the almonds in a skillet over a medium heat and then add to the bowl. Next up, throw in the chopped onions, and stir in mayo, and balsamic vinegar to provide the base to your dressing. To complete this speedy side dish season with black pepper and crumble feta cheese over the mix to give your salad a creamy kick. All this paired with our smoked haddock fishcakes will give your taste buds a saucy sensation that will be begging for more action.
