This Father’s Day, there’s only one way to pull dad out of bed… with the irresistible smell of breakfast! So, our Saucy chefs have created a showstopper of a recipe that will have him leaping down the stairs with a goofy grin on his face.
So what does the recipe include? Smokey bacon? Yes. Saucy Smoked Haddock with a Vintage Cheddar Sauce? Double yes. The latest food trend, cloud eggs? Of course! Plus, a little spinach to help with your 5 a day.
Try our bacon & cheese cloud eggs with Haddock, finished with a Vintage Cheddar and Chive sauce:
Ingredients: Serves 2
○ 2 eggs
○ 2 Saucy Cook from frozen Haddock fillets, with a vintage Cheddar and Chive Sauce
○ 3 slices of streaky bacon, cut into small pieces
○ 50g of Grated cheese
○ Handful of spinach
○ Black pepper
Step 1: Place 2 haddock fillets into a pre-heated oven (180°C) for 24 minutes. Meanwhile, separate both eggs, removing the yolk and setting aside still intact. Proceed to whisk the eggs whites.
Step 2: Once whisked, carefully fold in the grated cheese and then the bacon.
Step 3: Pile the egg mixture into two small, slightly raised circles on a baking try, on top of non-stick parchment paper. Make a well in the middle of each circle so you can later add the yoke back in.
Step 4: Put the egg mixture in the oven for approximately 5-6 minutes. Remove from the oven and place in the yoke. Once the yoke has been carefully placed in the well, put back the baking tray back into the oven for approximately 3 minutes, then remove
Step 5: Place you Vintage Cheddar and Chive sauce in a mug of boiling water for 4 minutes, to heat. Then begin to stack up your breakfast. Begin with your handful of spinach, then place the haddock fillet on top, drizzling the cheddar and chive sauce on top. Finish by delicately placing your cloud eggs on top of the stack… and enjoy.
