COCONUT PRAWNS WITH MANGO DIP

WHAT YOU NEED:

1 pack of raw king prawns

1 Mango skin removed cut into chunks

2 Tablespoons of Honey

1 Lime, Juice and zest

Small bunch of coriander

A pinch of salt

Seasoned flour

1 egg beaten

50g panko breadcrumbs

50g desiccated coconut

Method.

In a food processor blend together to mango, honey, Lime juice, zest and coriander to a smooth sauce. Place in the fridge.

Coated the prawns on a plate of seasoned flour. Then Individually dipp in egg wash removing and excess. Finally dip into mixed panko and coconut.

Deep fry the prawns for approx 3 minutes at 150C or until crumb is light and golden. Place onto kitchen towel to drain and serve with the sticky sweet dipping sauce.
