SAUCY CHILLI, LIME AND GINGER STIR FRY

Get saucy in the kitchen with our recipe for Salmon, Chilli, Lime and Ginger Stir Fry, served with rice noodles, sugar snap peas and tenderstem broccoli.

What you need: Serves 2

○ The Saucy Fish Co. Salmon with Chilli, Lime and Ginger Dressing (2 fillets)
○ 160g rice noodles
○ 100g sliced tenderstem broccoli
○ 100g sugar snap peas
○ 1 chopped clove garlic
○ Small chunk of ginger, peeled and sliced
○ Sprinkle of black sesame seeds
○ Squeeze of lemon juice

How to make it:

STEP 1: Place the salmon fillets under the grill on a medium heat for 10 – 12 minutes.

STEP 2: Next, pop the noodles in a pan of boiling water and leave to cook for around five minutes. Once soft, remove from pan and rinse under cold water and drain well.

STEP 3: Meanwhile, heat a drop of oil in a wok, adding garlic and ginger. Throw in the broccoli and sugar snap peas and fry for a couple of minutes.

STEP 4: Add the cooked noodles to the wok and stir into the mix for a few minutes before removing from the heat.

STEP 5: To prepare the chilli, lime and ginger dressing, simply pop the sachet in a cup of warm water for one minute.

STEP 6: Dish up the stir fry into two bowls and top with the freshly grilled salmon fillets. Finish off with a drizzle of dressing and finally, enjoy!

Saucy Chef Top Tip: Spice up your office lunch by cooking the salmon at home the night before and pairing with microwavable noodles.
