We may be an optimistic bunch, but we won’t be holding our breath for non-stop sunshine this August.
Instead, we are taking matters into our own hands, bringing the sunshine to us with this tasty Mediterranean dish (note: you will save a fortune on plane tickets).
Try out Italian Wholemeal Pasta Tagliatelle with Salmon and Parsley.
What you will need: (serves 2)
○ 2 x Ready to Eat Steamed Salmon with Lime & Coriander Dressing from The Saucy Fish Co.
○ 100g dried tagliatelle
○ 30g frozen peas
○ 1 tablespoon olive oil
○ 2 large egg yolks
○ 2 tablespoons single cream
○ 1 tablespoons grated Parmesan cheese
○ Black pepper
○ Basil, finely chopped
What you need to do:
Cook your pasta in boiling water for 10 minutes. Meanwhile, heat the oil in a large frying pan.
Whisk your egg yolks, and then add cream and the parmesan cheese. Season with black pepper.
Drain the pasta then add it to a frying pan and pour in the egg/cream mixture. Add the Ready to Eat salmon fillets to heat.
Stir, then add the basil and a little more parmesan cheese to finish.
